in the kitchen: tex-mex night

Earlier this week, I made salsa using Gretel’s recipe (1 kilo of tomatoes, 1 onion, 4 ardei uite, herbs) on the off chance that our packages would come from home.  They did! (More on that later!) And enclosed were seasoning packets for tacos, burritos, fajitas, etc (Thanks to BOTH our moms!).  That sealed the deal that I would attempt to make flour tortillas so we could have a tex-mex night.

Using a well-liked recipe on allrecipes.com, armed with a wine bottle as a rolling pin (I’m a poor PCV & I needed an excuse to drink wine), and covered with flour, am facut (I made) tortillas.  They were a bit bready, but that was my doing, as I didn’t have the patience to roll them out thin enough.  Regardless, with some rice, beans, taco seasoning, homemade salsa, cheese, and smantana (sour cream), this meal completely hit the spot.  We even have some tortillas left over for breakfast burritos for brunch tomorrow morning.
