in the kitchen: my mom’s granola

Veronica’s Mom’s Granola (granola mamei Veronicai)

DRY INGREDIENTS

  • 3 cups uncooked old fashioned oatmeal (fulgi de ovaz); not quick cooking!
  • 1 cup untoasted wheat germ (t?râ?e de grâu is wheat bran; haven’t found wheat germ in Romania)
  • 1 cup unsweetened coconut (nuc? de cocos) (optional, if omitted, add 1 additional cup of oatmeal)
  • 2 Tbsp. cinnamon (scor?i?oar?)
  • 2 Tbsp. brown sugar (zahar brun BUT make sure this is really brown sugar not raw sugar; I haven’t found brown sugar yet here)
  • ¼ cup powdered milk (lapte praf)

WET INGREDIENTS

  • ? cup honey (miere)
  • ? cup light cooking oil but do not use olive oil (I used ulei de floarea-soarelui with good results)
  • 1 tsp. pure vanilla extract (esen?? de vanilia)

 

Mix dry ingredients in a shallow glass dish (or in a tava). Heat oil, honey, and vanilla. Drizzle over dry ingredients and mix with hands. Toast in 250° preheated oven for one hour. Remove from oven and add nuts, raisins, chocolate chips, etc. (up to 3 cups). Store in an air-tight container.

Veronica’s Note: if you like your nuts roasted (get your mind out of the gutter), you can add them with the dry ingredients in the oven.  Raisins, dried fruit, chocolate bits should be added once the granola is really cooled.

This makes a great breakfast with yogurt or drizzled with a little milk.  It’s also a handy snack  My mom also has a recipe to make them into granola bars.  I’ll get that posted next.
