recipe: Buttermilk Spice Cake

Here is my mom’s recipe as folks asked.  Note that the times for beating the mixture are important.  Overbeating makes an untasty cake.  This cake goes well with a buttercream or cream cheese frosting. Enjoy!

Dessert: Buttermilk Spice Cake

2¼ cups flour
1 cup granulated sugar
¾ cup brown sugar (packed)
1 tsp baking powder
1 tsp baking soda
1 tsp salt
¾ tsp cinnamon
½ tsp cloves
¾ tsp allspice
½ tsp nutmeg
¼ tsp ginger
½ cup shortening
3 large eggs
11/3 cups buttermilk (not lowfat)

Preheat oven to 350°. Grease and flour two round layer pans (8” or 9” in diameter) or one 13”x9”x2” pan. Measure all ingredients into a large mixer bowl. Blend 30 seconds on low speed, scraping bowl constantly. Beat three minutes on high speed, scraping occasionally. Pour batter into pan/s. Bake layers 40-45 minutes, or rectangle 45 minutes. Cool before frosting.

    have read all of your entries and viewed the photos. soooothe hardest part is finding the right projects for each of you.my dave had a built in job description, but I was called the non-matrix spouse who had to find her way and do. keep me posted. have a new kitten who someone found half dead. her name is munchkin. she loves rocky who is not quite sure or not of their relationships. munchkin is a diluted tabby, is wild, wild, wild. i was very depressed one day and finding no joy in life. i prayed please Lord let me find something of joy. well, could their not be any better messenger of joy than a kitten? just what the doctor ordered. hugs to you both. missed you at the christmas swap . marti outdid herself with her sex toys this year.
